Easy Ginger Beer

                                                                                                                                       makes 10 servings



  • 1 cup sugar
  • 1 cup water
  • ½ cup of fresh ginger
  • 1 lemon
  • fresh mint sprigs – spearmint works well
  • 1 liter of plain seltzer water





  • combine sugar and water over medium heat until sugar melts into the water creating a simple syrup; set aside
  • grate the ginger with a coarse grater
  • clean and pick the mint leaves and muddle them into the grated ginger
  • add the ginger-mint combination into the simple syrup
  • let it sit for an hour or more and then strain (creating an infused simple syrup)
  • refrigerate until ready to use
  • when ready to drink, create one large or many small individual servings
  • use a tablespoon or two (or more) of infused simple syrup and add seltzer to the glass. Make strong or weak according to taste.  
  • add a mint leaf for garnish


If you are a fan of lime, you can substitute lime for the lemon.
