Carrot-Beet Salad with Maple-Balsamic Vinaigrette

Serves 4

Ingredients:
3 Carrots
3 Beets

The MAPLE-BALSAMIC VINAIGRETTE:
2 Tbsp balsamic vinegar
2 Tbsp maple syrup
1/2 clove garlic, minced
1/2 cup olive oil (or canola oil)

Directions:
Grate carrots and beets in food processor.
Mix together maple-balsamic dressing and add to carrots and beets.

Let stand for 1 hour to marinate before serving, if desired.
