Carrot-Maple Muffins

Ingredients:
2 cups cornmeal
2 cups flour
4 cups whole wheat flour
4 tbsp baking powder
2 tsp salt
4 eggs
1 cup oil
2 1/2 cup yogurt
2 cup maple syrup
2 tsp vanilla
4 tsp cinnamon
1/4 tsp nutmeg
4 cups grated carrots

Directions:
1.  In a large bowl, mix together the wet ingredients;  add grated carrots to this mixture.
2.  Mix the dry ingredients in a smaller bowl.
3.  Add dry ingredients to liquid.  Don’t stir too much.
4.  Pour into greased muffin tins and bake at 400 degrees for about 20 minutes.
5.  Recipe makes 4 dozen regular sized muffins
