Roasted Delicata Smiles

Prep time: 5-10 minutes

Cook time: 15-20 minutes

Total Time: 20-30 minutes




  • Delicata Squash
  • Olive Oil – about ⅛ cup
  • Salt – about ¼ tsp
  • Rosemary (optional)- leaves of 1 stalk finely chopped
  • Garlic (optional) – 3 cloves leaving skin on




Preheat oven to 400 F

1) Wash delicata

2) Cut delicata in half, lengthwise

3) Use a spoon to scoop out all seeds of both halves

4) Slice each half into ¼ inch “smiles” leaving skin on

5) Place on baking sheet with whole garlic cloves and drizzle with olive oil, just enough to lightly coat the squash

6) Sprinkle with salt (and rosemary if desired) and mix thoroughly (using hands is most effective)

7) Spread out squash in a single layer and bake for 15-20 minutes, turning once, until golden brown or desired sweetness (the longer you roast, the sweeter the squash)
